Sweet, sweet corn! It’s a vegetable on the cob but the individual kernels are considered grains. It’s earthy, sweet, grainy, and it’s a summertime jewel, that completes the Jersey Tri-fecta of Corn, Peaches, and Tomatoes! The best tasting corn is always harvested in the Summer months. It can be incorporated into soups, salads, fritters, bread and many other dishes. Whole entire books have been written about corn….”The Story of Corn”, “Corn Lover’s Cookbook”. But for now let’s just talk about some great recipes you can make with our fresh Jersey Corn!

Elote (Mexican Street Corn)

Grilled corn served with either butter, mayonnaise, or sour cream along with chile seasoning, lime, cilantro, and cotija cheese. We have a feeling this will become a standard in your household after you make it for the first time. 

Smoky Corn & Jalapeño Dip

You can’t have a complete summer without dip. This dip balances sweet, smoky, and spicy flavors, with plenty of corn freshly cut from the cob. Jalapeño peppers, mayonnaise, sour cream , cheddar cheese, pepper Jack cheese and, smoked paprika. Perfect with Sickles’ own Tortilla chips, or your favorite chip.

Grits with Corn, Goat Cheese & Roasted Tomatoes

Give yourself a bowl of savory grits with plenty of corn cut straight from the cob and sweet roasted tomatoes. The goat cheese adds a new flavor to this classic dish. Great for lunch on a day off, or a great side dish for most meals! 

Double Corn Bread with Smoked Mozzarella and Sun-Dried Tomatoes

For those who don’t like sweet cornbread, here is a savory cornbread that you’ll love! And one with actually cornbread, some might be opposed to the idea of actual corn in cornbread but give it a try! We’re sure that this recipe will change your mind. And yes traditional cornbread doesn’t have corn, its cornmeal.

Fresh Corn and Tomato Salad 

This recipe is perfect for barbecues and picnics. Fresh corn and basil make a huge difference in this Salad .Warm and colorful, this side dish bursts with refreshing vegetable flavor. Add Dijon mustard for some pizzazz. Served cold!

Zucchini-Corn Fritters 

Yummy pan fried zucchini corn fritters that your family won’t get enough of! These fritters are light and fluffy with lots of zucchini and fresh corn. Cheese is optional, and you can experiment with your favorite cheeses Crisp on the outside, soft inside, don’t have too many ingredients, and are easy to make. 

Corn Mashed Potatoes

Great to serve with grilled meats and vegetables. Yukon gold will offer a creamier texture, and the pale yellow color matches well with the corn. Corn adds the crunch and more flavor than your usually buttered and mashed Potatoes. 

Quinoa Corn Chowder

A thick, creamy, hearty dish, packed with protein and fiber! An easy meal in one pot. You can cook everything one by one and then add it together, but you can also add it all together in the pot it will just take longer to thicken. The quinoa and beans will add the health benefits a usual chowder wouldn’t have. It will definitely be added to your regular rotation of week night meals!
